Chocolate Chip Omega Cookies II (easily egg free)


Chocolate Chip Omega Cookies
Soft and chewy, who would suspect that these cookies are packed with the goodness of rolled oats and flaxseed meal? G-man knows because he helped bake them. The Cadet blissfully left the kitchen with chocolate smeared all over his grin. (Busted. I was looking for an excuse to bake with chocolate again.)

1/4 cup butter
1/2 cup brown sugar
1/4 cup white sugar
1 egg OR 3 tbsp water
1/2 tsp vanilla

1/2 cup unbleached, all purpose flour or whole wheat flour
3/4 cup flaxseed meal
1 tsp baking powder

1/2 cup semi-sweet chocolate chips (or carob chips*)
1/2 cup rolled oats

Preheat oven to 375F

Cream the butter, vanilla, sugar, and egg together  in one bowl.

Mix the flaxseed meal, flour, and baking powder in another bowl. Add the wet and dry ingredients together and mix well. Stir in the chocolate chips and rolled oats.

You may need to put the dough in the freezer for a few minutes to harden up. Roll into one-inch balls and place two inches apart on cookie sheets.  Bake for 10-11 minutes @375F Makes two dozen.

*If you substitute carob chips for the chocolate, stick to the baking times. I have burned countless batches of cookies waiting for carob chips to melt. Carob chips do not melt the same way that chocolate does.

[If you like a flatter, crisper cookie, add a tablespoon of water to the mix. I made them eggless tonight with a total of 4 tablespoons (1/4 cup) of water and they were awesome!]
